Superchef Alain Ducasse has often been accused of spreading himself too thin, with over 20 restaurants, from Tokyo to Monte Carlo, staffed by underlings he has trained. Now that he has opened a cooking school in Paris (64, rue de Ranelagh, 75016 Paris; tel.: 01 44 90 91 00), his recipes will also be spread far and wide. You won’t see the maestro himself there, of course, but chefs trained by him and occasional guest chefs.
